Sausage and Cheddar Muffins

Take breakfast on the go with these sausage & cheddar muffins! These breakfast muffins contain Smart Chicken Country Breakfast Sausage, eggs and sharp cheddar making them a perfect portable high protein breakfast option.

Ingredients

  • 5 links Smart Chicken Country Breakfast Sausage, coined and quartered

  • 2 cups flour

  • 1 Tablespoon baking powder

  • ½ teaspoon kosher salt

  • ½ teaspoon baking soda

  • 4 Tablespoon unsalted butter, softened

  • 1 egg, beaten

  • 1 cup milk

  • 1 cup sharp cheddar, shredded

Directions 

Preheat oven to 375°F. Combine flour, baking powder, salt, and baking soda in a large mixing bowl. In a separate bowl, combine butter, egg and milk. Add the wet ingredients to the dry ingredients and stir until combined. Gently fold in cheddar cheese and sausage. Spoon the mixture into a greased muffin pan. Top with additional shredded cheese if desired and bake for 20-25 minutes or until tops are golden.
