This grilled chicken blackberry salad is quintessential summer. The juicy ripe berries taste amazing with the marinated grilled chicken. Combined with mixed greens, toasted sliced almonds, thinly sliced red onion, crumbled goat cheese and sliced avocado, this combination is hard to beat. Drizzle everything with the homemade blackberry vinaigrette for the ultimate summer salad.
Ingredients
For the Grilled Chicken
12 ounces Smart Chicken Boneless Skinless Chicken Breasts, two 6-ounce breasts
1-2 tablespoons olive oil
salt, to season chicken
black pepper, to season chicken
For the Salad
4 ounces mixed greens, divided into two bowls
3 ounces blackberries, fresh, divided between the salads
⅓ cup red onion, thinly sliced, divided between the salads
¼ cup goat cheese, crumbled, divided
2 tablespoons toasted sliced almonds, divided between the salads
½ avocado, sliced and divided between the salads
Blackberry Vinaigrette Dressing
¼ cup olive oil
2 tablespoon balsamic vinegar
2 tablespoons blackberry juice, fresh squeezed
1 tablespoon honey
¼ teaspoon salt
¼ teaspoon black pepper
Directions
Marinate the Chicken
Add the chicken breasts to a glass bowl or plate and drizzle them with olive oil on both sides. Season with salt and black pepper. Set aside.
Grill the Chicken
Preheat the grill to 400-450 degrees. Brush the grates with avocado oil and add the chicken. Grill for 6-7 minutes per side or until the internal temperature reaches 165 degrees Fahrenheit. Remove from the grill and let the chicken rest before slicing.
Make the Dressing
Combine olive oil, balsamic vinegar, fresh squeezed blackberry juice, honey, salt and black pepper. Whisk until well combined.
Make the Salad
Grab two large bowls, split the mixed green between the bowls. Top each salad with the sliced avocado, thinly sliced red onion, toasted sliced almonds, fresh blackberries, and crumbled goat cheese. Top each salad with one sliced grilled chicken breast and a drizzle of the blackberry vinaigrette. Serve and enjoy.
