Lighter Breakfast Strata

A breakfast strata is an easy, elegant way to serve a crowd—whether you’re hosting holiday house guests or a brunch gathering. Lighten up a classic sausage-and-cheese strata with a few simple swaps that save you about 100 calories per serving and half the fat without sacrificing flavor!

Ingredients

  • 12 eggs, beaten

  • 2 cups 1% milk

  • 1 teaspoon dry mustard

  • ¼ teaspoon onion powder

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

  • 8 to 9 cups cubed, day-old French or Italian bread, cut into ¾-inch to 1-inch cubes

  • 1 package Smart Chicken Country Breakfast Sausage, chopped into bite-sized pieces

  • 2 cups sharp Cheddar cheese

  • 1 cup chopped tomatoes

  • 1 cup chopped fresh spinach

Directions

Preheat oven to 350°F. In a large mixing bowl, whisk together the eggs, milk, dry mustard, onion powder, salt, and pepper and set aside. Spread cubed bread across the bottom of a greased 9-inch by 13-inch baking pan. Layer with chopped sausage, cheese, tomatoes, and spinach. Pour the egg mixture evenly over the bread, sausage, cheese, and vegetables. Transfer to the oven and bake at 350°F for 1 hour. Let cool for 10 to 15 minutes before serving.
