This simple salad combines fresh vegetables with quinoa and grilled Smart Chicken Boneless Skinless Breasts topped with a vinaigrette dressing made with Smart Chicken Organic Classic Chicken Bone Broth.
Ingredients
Bone Broth Vinaigrette
6 tablespoons vegetable or olive oil
2 tablespoons Smart Chicken Organic Classic Chicken Bone Broth
1 tablespoon apple cider vinegar
¼ teaspoon Kosher salt
¼ teaspoon black pepper
¼ teaspoon fresh garlic, finely minced
1 tablespoon fresh parsley, minced
Salad Mix
2 lbs Smart Chicken organic boneless skinless breasts
1 cup dry quinoa, cook as directed or use 2 cups Smart Chicken Organic Classic Chicken Bone Broth for cooking
6 cups kale, washed and cut into bite size pieces
4-6 oz. feta cheese crumbles
1 cup sliced cucumbers
1 cup carrots, julienned
1 cup cherry tomatoes, halved
1 lemon, cut into wedges
1 handful Italian parsley
Chicken Marinade
1/2 cup water
3 tablespoons Worcestershire sauce
3 tablespoons vegetable oil
1 teaspoon fresh garlic, minced
1 tablespoon dried parsley
½ teaspoon Kosher salt
¼ teaspoon black pepper
Directions
For chicken, combine ingredients for marinade, add chicken and allow chicken to marinate for at least 6-8 hours before grilling. Preheat grill to medium high heat. Grill chicken until cooked through, about 5-7 minutes on each side, or until chicken reaches an internal temperature of 165°F. Remove chicken from grill and allow to cool. Once chicken is cool, slide into pieces and set aside. Cook quinoa as directed on package or cook with Smart Chicken Organic Classic Chicken Bone Broth for additional flavor. Combine all salad ingredients and serve with Bone Broth Vinaigrette.
